Here is a simple recipe for making Tom Yum soup using Tom Yum paste:

 

Preparation time: 15 minutes

Cooking time: 15 minutes

Servings: 4

 

Ingredients:

  • 1 liter of water
  • 2-3 tablespoons of Tom Yum paste
  • 200g peeled and deveined shrimp
  • 2 limes
  • 2 stalks of lemongrass (optional)
  • 3-5 Makrut lime leaves
  • 5 button mushrooms
  • 1 handful of cherry tomatoes cut in half
  • 1-2 tablespoons of fish sauce
  • 1 tablespoon of palm sugar (or brown sugar or white sugar)
  • 2 bird's eye chilies (optional)
  • Fresh coriander for garnish

 

Instructions:

  1. In a pot, boil water with Tom Yum paste until the paste is well mixed with water.

  2. Add lemongrass cut into large pieces and Makrut lime leaves.

  3. Add shrimp and mushrooms cut into quarters.

  4. Add fish sauce and palm sugar (or brown sugar) to balance the flavors. Start with a small amount.

  5. Add bird's eye chilies whole for a spicier taste (optional).

  6. Add cherry tomatoes and simmer the soup for about 5 minutes until the shrimp is cooked and the cherry tomatoes are slightly softened.

  7. Remove the soup from heat and add lime juice starting with the juice of one lime.

  8. Taste and adjust the seasoning according to your taste, if necessary. (*with fish sauce, sugar, or lime juice).

  9. Serve hot in bowls and garnish with fresh coriander leaves.
