MARINADE FOR BEEF

INGREDIENTS
- 450 grams of beef (such as flank steak or rib-eye)
- 1/4 cup lemongrass and tamarind chili paste (or less)
- 2 tablespoons of soy sauce
- 2 tablespoons of olive oil
- 2 cloves of garlic, chopped
- 1 teaspoon fresh ginger, chopped
- 1 tablespoon brown sugar
- Salt and pepper to taste
STEPS AND INSTRUCTIONS
- In a bowl, mix the Buriram lemongrass and tamarind chili paste, soy sauce, olive oil, minced garlic, ginger, brown sugar, salt and pepper. Mix well until the marinade is well combined.
- Place the beef in a shallow dish or resealable plastic bag.
- Pour the marinade over the beef, making sure it is evenly coated. If using a plastic bag, seal it tightly, removing as much air as possible.
- Marinate the beef in the refrigerator for at least 1 hour, or ideally overnight for the best flavor.
- When you're ready to cook, preheat your grill or skillet to medium-high heat.
- Remove the beef from the marinade and discard the excess marinade.
- Cook the beef on the grill or in the pan for a few minutes on each side, or until cooked to your liking.
- Once cooked, remove the beef from the heat and let it rest for a few minutes before serving.
- Serve the marinated beef hot, garnished with fresh herbs if desired.
