MARINADE FOR CHICKEN SATAY

Chicken Satay Quantity for Restaurant

Preparation time: 2.5 hours

Marinating time: 1 hour or overnight

Servings: 5kg. (225 skewers)

Ingredients :

  • 5 kg chicken, cut into small pieces
  • 2 tablespoons curry powder
  • 2 tablespoons of cumin powder
  • 1/2 cup lemongrass-tamarind paste
  • 2 tablespoons sweet chili sauce
  • 1/4 cup soy sauce
  • 1 cup of coconut milk
  • 2 tablespoons of vegetable oil

Instructions :

  1. In a bowl, add all the ingredients for the marinade, except the chicken, and mix thoroughly.
  2. Add the chicken to the marinade and coat well.
  3. Leave to marinate for an hour or overnight in the fridge before putting on skewers and grilling according to your preference.
