GRILLED CHICKEN WITH LEMONGRASS AND TAMARIND

Make Thai grilled chicken like the one you find on the streets of Bangkok using our delicious lemongrass and tamarind chili paste.

You can recreate it in your home kitchen!

Preparation time: 10 minutes

Marinade time: 2-3 hours or overnight

Cooking time: 45-60 minutes

Servings: 4

Ingredients :

  • 1 whole chicken (approximately 1.5 - 2 kg), cut into Spatchcock from the breast side
  • 2-3 tablespoons lemongrass-tamarind chili paste
  • 4 tablespoons of vegetable oil
  • 2 tablespoons of brown sugar
  • 3 tablespoons oyster sauce
  • 1 head of garlic, chopped 1 teaspoon of coriander powder
  • 2 tablespoons of soy sauce

Instructions :

  1. In a bowl, add all the marinade ingredients except the chicken and mix thoroughly.
  2. Add the chicken to the marinade and coat well.
  3. Leave to marinate overnight in the refrigerator.
  4. Remove the chicken from the refrigerator 20 minutes before grilling it in the oven at 375°F (190°C) for 45 to 60 minutes or on the barbecue for 30 to 40 minutes.
