Omelette à la citronelle et au tamarin

INGREDIENTS

STEPS AND INSTRUCTIONS

    1. Crack and whisk eggs in a bowl.
    2. Add the chili paste.
    3. In a nonstick skillet, heat the oil over medium-high heat.
    4. Pour in the egg mixture and cook for 2 minutes.
    5. Turn and cook for 1 minute or until the omelette is firm.

    Serve with toast or steamed jasmine rice.

    TIPS:

    • To vary the taste and obtain a heartier omelette, try this recipe with duck eggs.
    • In Thailand, we commonly enjoy this omelette with jasmine rice, but it pairs well with toast too.
